Ingredients: 6 oz. skinless, boneless chicken breast Salt and pepper to taste 1 tsp. of olive oil 1 ½ cups of thinly sliced Spanish onion 2 tbsp. of freshly squeezed lime juice 4 tsp. dried cilantro 1 tsp. ground cumin 4 medium whole grain tortillas 2 tbsp. of nonfat sour cream ¼ cup of low fat shredded cheddar cheese
Directions: First place chicken in large saucepan and add salt, pepper, and water (just enough to cover chicken). Cook over medium heat for 25 minutes or until chicken is fully cooked and remove chicken and let cool, then shred with a fork. Next heat olive oil in a nonstick skillet, add onion and cook for 1minute. Then add shredded chicken. Stir until crispy. When most of the liquid is gone; drizzle lime juice over chicken, season with cilantro, cumin, salt and pepper. Last place tortillas on plates and add chicken sour cream and cheese. Fold over and serve.
